From old sheermal to new sourdough, the city’s ovens are having an argument about what bread is for.

Lahore has always baked. What is new is the split: tandoor bread that still feeds a street, and cafe bread that feeds a mood. Both are real. Pretending one cancelled the other is a food-media habit we are not going to pick up. A naan is not artisanal. It is breakfast. The word you want is hot.

The tandoor is still the city’s oven
Asif’s tandoor in Ichhra starts before the cafes unlock. Naan, a butter kulcha at dawn for people who have already worked, sheermal when a stew is the plan. This is infrastructure. You do not need a tasting note. You need heat, a little char, and a bread that can scoop. If the naan has sat, it is a different product. Queue when the oven is running. That is the whole map for half the city. The other half still thinks bread begins when a cafe puts a loaf on a wooden board. Both halves live in Lahore. Only one of them feeds a street at 6am.
Sheermal, kulcha, and the argument with stew
Sheermal with a stew is still the move if you want to understand Lahore at a table. Sweetness against gravy, saffron if the baker is not lying, a softness that hotels imitate with too much ghee. A butter kulcha at dawn is still the move if you want to understand a worker. Rank them for your morning, not for the nation. Karachi has its own tandoors; this piece is a Lahore map. Steal the method, not the bragging rights. If you are baking sheermal at home, keep the dough rich, the oven fierce, and serve it the minute it can be torn. A sheermal that waits is a bun with perfume.
The new loaf
Sourdough with eggs is the move if you want to sit down with a laptop. It is a real loaf when the crumb is open and the salt is right. It is a mood when the price is a day’s naan budget and the bread is still gummy. Cafe bakeries in DHA and Gulberg are doing both. Ask when it came out of the oven. Yesterday’s sourdough is as dead as yesterday’s naan, only more expensive.
Cakes, Eid, and kitchens you can visit
Home bakers in DHA and Johar Town are doing the most interesting cakes — less fondant, more citrus, a pistachio that tastes like pistachio. Order from people whose kitchens you can visit. Wedding cake is a trust exercise. Eid orders should be placed like you respect the oven: early, specific, not a voice note at maghrib. Fondant that looks like marble is a sculpture. A slice you can eat with tea is baking.
How to queue
Know which errand you are on. Bread is infrastructure. Cakes are celebration. A tandoor at dawn is not a cafe, and a cafe is not a tandoor. Do not ask Asif for sourdough. Do not ask the cafe for a sheermal that can take paye. Lahore is large enough for both ovens. Your morning is not.
