A seekh kebab mixture should grip the skewer before the skewer reaches the fire. If it slides in your hand, the grill will not rescue it.

Begin with cold mince containing enough fat for the cooking method. Finely chop onion, chilli, coriander and ginger, then squeeze excess water from the onion. Long wet strands create gaps; purée releases even more liquid. Add crushed spices and salt, mixing until the mince becomes slightly tacky but stopping before it turns pasty. Chill it while the grill heats.

Cook a teaspoon-sized patty in a pan. This is your chance to correct salt, heat and tenderness without gambling the batch. If it crumbles, mix a little longer and check moisture before reaching for flour. If it bounces like sausage, it has been overworked or packed with binder.

Shape with a light, wet hand

Press a modest portion around a flat metal skewer, spreading it to an even thickness and leaving shallow ridges. Thick middles cook slowly; thin ends burn. With wooden skewers, follow their preparation instructions and remember they do not conduct heat into the centre like metal.

Place kebabs over strong, controlled heat and leave them long enough to set before turning. Rotate as each side browns, watching the meat rather than performing constant quarter-turns. Minced meat must be cooked safely; use an appropriate thermometer and current local temperature guidance rather than colour alone.

Let the kebabs rest briefly, then slide them off without squeezing. Serve with naan, onion, lemon and chutney sharp enough to meet the fat. For freezing, shape portions consistently, separate them well and label whether they are raw or cooked. Juiciness is not hidden inside one spice mix. It is the result of moisture controlled before cooking and heat stopped at the right moment.

When cooking for guests, make every kebab the same diameter and keep raw trays refrigerated. Stagger the grill so cooked meat does not wait under a sealed cover, where its crust softens. Keep raw utensils away from the serving platter and replace the cook’s tasting plate after the test piece.
